 The problem of how to maintain produce shelf life during transportation has a long history. And when things go wrong during the sometimes long journey between the farm or packing house and the retail outlet, carriers are most likely to be blamed for any spoilage and adulteration that may occur during many supply chain hand off operations. The carrier’s ability to prove, to both the shippers and receivers, that temperatures were maintained within specified upper and lower temperature control limits is becoming more critical.

As the finalization of the FDA’s FSMA rules on the transportation of human and animal foods approaches, shippers, carriers and receivers of food by truck and rail will be required to establish updated procedures capable of maintaining a sanitary and temperature controlled food transportation system. With the trucking industry becoming the focus of execution of control procedures, changes to old food transportation practices will be required.
