The gluten-free market is one of the fastest growing markets worldwide. About 18 million Americans suffer from gluten intolerance or celiac disease. For these people and those who suffer from gluten sensitivity, gluten-free products are a necessity. The FDA issued a final rule in August 5, 2014 to help assure customer confidence that defines gluten-free claims across the food industry. The FDA may use its full range of routine post-market monitoring activities, including gluten analyses of food samples, food label reviews, and periodic inspections of manufacturer’s facilities to enforce the final rule.
In this audio Conference, expert Rotimi Toki will provide an overview of the scientifically valid methods available for conducting gluten testing and how to avoid the pitfalls commonly associated with incorrect gluten-free claims.
