An Annual Refresher Course for Food Safety Managers and Directors on CMS F-Tag (F371) Sanitary Conditions

The CMS’ surveyor’s investigative protocols and the guidelines are in place to determine whether your organization will fail or pass the food service audit portion of Annual Facility Survey. Auditors will ensure compliance to state and federal regulations through observation, interview and record review.

There have been notable changes in the revised guidelines for investigative protocols for F-Tag (F371) Sanitary Conditions. The changes are not just in methodology of determining safe food handing – the CMS has stepped up the education of survey teams on the interpretation of regulations, especially on the understanding of current food codes. In July 2015, the CMS also released the training, forms and updates, including the offsite preparation worksheet (used before survey entry), and the entrance conference worksheet (QIS facility copy).
